This blog is dedicated to pushing forth on a number of what I believe to be crucial but sometimes overlooked topics in the debate about human health and modern diet, including the roles of long chain saturated fats including stearic acid, polyunsaturated fats (PUFA), properly processed carbohydrates and perhaps my favorite macro-molecule, ethanol. I’m an outside of the box thinker who’s not afraid to challenge the orthodoxy, whether the orthodoxy is mainstream nutritionists or keto nutritionists with concepts such as The Croissant Diet and Wine Fasting. My goal is to educate while entertaining, making hard science approachable while (hopefully) getting a few giggles while unpacking scary subject such as wine as a food source and consuming massive quantities of long-chain saturated fats.
My work is based on my understanding of molecular biology, my love of food history and cooking and my experience in agriculture. To that end I have a genetics degree from Cornell University and a Culinary Certificate from The French Culinary Institute. After college I did cancer research at Memorial Sloan-Kettering and did bioinformatics for The Berkeley Drosophila Genome Project before leaving professional science. For the previous 15 years I have raised rotationally grazed hogs and run a retail butcher shop and USDA inspected meat processing plant.
