Cassava Pancake Test Meal

The breakfast I will use to measure the effects of various supplements on glucose tolerance post-prandially

Ingredients
  

  • 65 g Cassava Flour Otto's
  • 65 g Fioreglut Flour Caputo
  • 1 large egg
  • 1 tbsp gelatin powder
  • 1 dash salt
  • 80 g Maple Syrup
  • 2 Oz Fruit Preserves Bonne Maman
  • Water
  • 12 Oz Orange Juice Tropicana

Method
 

  1. Add dry ingredients to bowl.
  2. Whisk the gelatin into 1 cup of water
  3. Add the egg and gelatin to dry ingredients and combine.
  4. Wait five minutes.
  5. Add water to achieve a pancake dough consistency.
  6. Cook pancakes without fat on nonstick ceramic griddle.
  7. Top with maple syrup and fruit preserves.
